Rice Pilaf with Carrots, Celery and Mushrooms By Angel Bean Rice Pilaf with Carrots, Celery and Mushrooms What you need: 1 Medium onion 1 Carrot peeled 1 Stalk of celery 8 Large mushrooms 4 Tablespoons of butter 1 Cup of long-grain white rice 2 Cups of chicken broth or stock ½ teaspoon of salt Cut the onion, carrot, celery each in a ½ inch dice. Wipe the mushrooms off then dice in a ½ inch dice. Melt the butter in a saucepan over medium heat and when the foam subsides, add vegetables and mushrooms and saute until softened about 5 minutes stirring occasionally. Add the rice, tossing to coat with butter. Add the stock and the salt. Reduce the heat to very low. Cook covered until the rice and vegetables are tender about 20 minutes. This sounds like a good recipe, Angel. However, the butter, chicken broth and salt may require the nurse if I make this dinner a habit.
