Rice Pilaf and Scallions By Angel Bean Rice Pilaf and Scallions 2 Stalks of celery A Medium sized bunch of scallions 1 Large yellow onion 3 Tablespoons of vegetable oil ¾ Cup of rice 1 ½ Cups of chicken stock Salt and pepper, seasoned to taste ½ Cup of chopped parsley Wash the celery and the scallions and dice fine. Peel and dice the onion. In a large skillet heat the oil add the celery and onions and saute ten minutes. Now add the scallions and the rice and saute stirring another three to five minutes. Now add the stock and bring to a boil over high heat. Cover the pan and reduce the heat to medium and cook until the rice is tender. All images on this intel are from Photobucket.com.
