Recipe for Carrot Soup By Angel Bean This carrot soup is not sweetened and has a nice taste. Carrot Soup 1 Bunch of carrots 1 Shallot 1 Cup of chicken broth 3 to 4 Cups of milk ½ Teaspoon of Black pepper or seasoned to taste ¼ Teaspoon of salt or seasoned to taste Cloves or parsley for garnish Saucepan Large spoon Peel the carrots and cut into thin slices. Peel and slice the shallots and cut into thin slices. Put the chicken broth into a saucepan and add sliced carrots and shallot and bring to a boil. Lower the heat and simmer until the carrots are tender, about 15 minutes. Take the carrot mixture and puree in a blender adding 1 to 2 cups of milk until smooth. Return the puree to the saucepan and thin to the desired consistency with milk. Add the salt and pepper and stir well with a wooden spoon. Serves 6 to 8. I would think adding a wooden spoon to the soup would make it kinda crunchy.
