Mocha Pudding By Angel Bean This is a great old-fashioned stove top recipe that's made from scratch. Mocha Pudding What you need: 1/3 Cup plus 2 teaspoons of sugar 2 Tablespoons of cornstarch 1 Large egg plus one egg yolk 2 ½ Cups of milk 1 ½ Tablespoons of Colo coffee A Few grains of salt 6 Ounces of bittersweet chopped chocolate 2 Teaspoons of vanilla extract ¾ Cup of whipped cream Ground cinnamon for garnish Heavy saucepan Another saucepan A Whisk In a heavy saucepan stir together 1/3 cup of sugar, cornstarch, egg and egg yolk until creamy. In a saucepan combine the milk, coffee and salt. Remove the pan from the heat and strain into the sugar and egg mixture. Now stir in the chocolate. Cook the mixture stirring constantly with a whisk until the pudding thickens and starts to boil. Then stir in the vanilla. In a large chilled bowl and using an electric mixer beat the cream and then chill in the refrigerator until the pudding is set. Makes 4 to 6 servings.
