Gumbo Creole Style Recipe

Gumbo Creole Style What you need: 1 Whole chicken 1 Ham (possibly a canned ham) 1 Large Onion 2 Stalks of celery 1 Green pepper 1 Red pepper 1/3 Cup of butter 1/3 Cup of flour 2 Tablespoons of salad oil 1 Clove of garlic 1 Teaspoon of salt ½ Teaspoon of pepper ½ Teaspoon of thyme ¼ Teaspoon of red pepper 3 Parsley sprigs 1 Bay leaf 1 Can of tomatoes 1 Cup of water 1 Pound of shrimp 1 Teaspoon of file (gumbo file) Dutch oven Heated serving dish Rice make as many servings as you need for your family 3 Sprigs fresh parsley Two skillets Slotted spoon Clean the chicken by rubbing the skin with a cut lemon and then soaking it in cold water for a few minutes and then rinsing it off with cold water. Cube the ham and chop the vegetables and heat butter over medium heat. Cut the chicken up into pieces then saute the chicken pieces until golden brown, add the ham cubes and saute for five minutes then remove all the meat from the pan leaving the greasy pan drippings in the bottom of the pan. Stir flour into the fat in the pan and cook until light brown to make your roux. Remove the roux sauce from the heat and in another skillet saute the onion, celery and peppers and garlic and cook until the onion is golden. Turn the onion, celery, peppers and garlic into a Dutch oven and add salt and pepper, thyme, crushed red pepper, parsley, bay leaf, tomatoes and water. Bring to a boil as you stir. Return the chicken and the ham to the Dutch oven and simmer covered for 40 minutes. Then stir in the shrimp and simmer covered for five minutes. Using a slotted spoon remove the chicken, ham and shrimp to a heated serving dish and keep warm. Bring the sauce to boiling and stir in the file powder and cook just until thick then gumboremove from heat. Now reheat the sauce and pour over rice. Serves 6 to 8. I like the recipe but I like the picture of the nurse better!!...Since it came from Photobucket, I'll assume it's not you.
Great detailed recipe, Angel.I might be tempted to omit the salt as I'm adding the ham, which has a lot of salt. Don't want the nurse to treat me for blocked arteries. Thank you for sharing. Best wishes. Frederick
